A couple days ago I found an amazing healthy pancake recipe that I think everyone, even those not into health food, will enjoy. I was skeptical at first but after the first few steps I could tell they how they were going to be able to taste so sweet. Basically you make a smoothie with the healthy ingredients. They make up what would be the milk or water in a normal pancake recipe.
Another thing I love about this is that it serves as much as a normal pancake recipe would.

Pancakes:
- 1 cup raw spinach, packed
- 1 banana
- 1 cup milk (I used almond)
- 1 egg
- 1 tbs Maple syrup
- 1 1/4 cup wheat flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
Banana cream sauce:
- 1 banana, mashed
- 6-ounce cup vanilla nonfat Greek yogurt
Blend spinach, blueberries, milk, bananas, and syrup. Mix in eggs after they are blender. Mix dry ingredients in a separate bowl. Mix dry ingredients into wet ingredients. Cook over medium heat. While pancakes are cooking, combine mashed bananas and yogurt.
